Clairin Vieux Sajous 4 Year Old Lustau Oloroso Cask represents one of the first true sherry casks in the history of rum.

It is produced in the grand terroir of St. Michel de l’Attalaye, with the Cristalline cane, one of the best ancient varieties, now grown only in Haiti and harvested by hand. Fermentation starts spontaneously with indigenous yeasts; the distillation still is heated over the bagasse fire; the cane fiber is squeezed and dried in the sun.

It was totally aged in the tropical climate of Port-Au-Prince, in barrels that Velier bought from Lustau and which contained the prized Oloroso and Pedro Jimenez, filled on November 30, 2017 and left until August 2021.

The still used in his small distillery was built personally by Monsieur Sajous. The traditional Clairin in Haiti is sold in bulk, you can buy it by going to the distillery with your own container: it can be found packaged in containers of different materials and shapes, sold along the dirt tracks of Haiti, in villages, in drugstores or “pharmacies” . To locate it, the “Ici on vend du Clairin” sign is displayed outside the characteristic colored shops. In Haiti, however, there is an unofficial classification but highly respected by the Locals, the territory of St Michel de L’Attalaye is in fact recognized for being the best for the Clairin, so much so that where the distillates of the grand terroir are sold you will find a sign with the words “Clairin St. Michel”, as if it were a real Clairin grand cru.
