Our Pinot Cask Finish begins with our Westward American Single Malt Whiskey; brewed first as an artisanal American Pale Ale from scratch using locally malted barley, ale yeast, and slow, low temperature fermentation. Distilled twice in custom low reflux copper pot stills designed to transform our fresh flavourful ale into whiskey. Matured in new, low char American Oak barrels, then mingled in small batches to achieve our signature balance and boldness. Westward Whiskey Pinot Cask is then finished for up to two years in casks that previously held pinot noir, Oregon’s premier grape varietal.
