Description
Seville Estate has this air of brilliance about it. Drive in and it’s that quaint cellar door but dig deep and it’s all focus and sophistication. This Shiraz lights those traits up and then some. Nestled in the Yarra Valley hills with some elevation (180m), these 1972 planted Shiraz vines are kicking goals. A pre-release sample of the 2020, pardon the 2019 bottle pic above.
Highlighted by handfuls of char and white pepper, the latter not surprising given its cool climate roots. Beef stock, dark plums and star anise rise up with cameos from nutmeg and clove. It has a softly, softly presence about it as it slowly reaches out to every extremity of the palate. The delicate pepper is a feature that rides long and finishes dry with a brick dust tannin. Above all, it’s a classy cool climate Shiraz.
