Description
A complex wine with licks of dark chocolate powder and an infusion of blackberries. Lovely glassy acidity keeps the wine tightly wound. The mouth coating tannins provide persistence of flavour for a long elegant finish. A delicious wine worth cellaring for up to 10 years.
Winemaking notes: Berries are completely de-stemmed and fully crushed. Inert gases are introduced to the ferment tanks prior to filling and then the fruit is inoculated with two different yeasts and co-inoculated with malolactic bacteria during primary fermentation. The berries are sequentially pressed straight to barrel after a moderately long fermentation period of 25 days followed by barrel to barrel racking.
